Chocolate salami

This is one of those recipes that has all the qualities: very quick to prepare, not expensive and very popular. I use Marie biscuits and Belgian plain chocolate.

Yield

Makes one sausage about 30 cm long and it will serve around 10 people.

Ingredients

Break up the chocolate and melt it with the butter in a basin over a pan of boiling water or perhaps in the microwave oven. Put the biscuits in a large plastic food bag and crush them with a rolling pin but do not overdo it as the chunky pieces give a very nice salami effect. When the chocolate and the butter have melted remove from the heat and add the sugar, sifted cocoa and the cherry brandy and mix well. Then stir the egg very well in the mixture. Tip in the broken biscuits and mix fairly well. Put the lot back into the plastic bag , it doesn't matter if it now has the odd hole in it, and with your hands form a roll along the length of the bag, it will just fit in, firm well, seal the end and refrigerate for at least a couple of hours. Cut into thin slices before serving.
